in the previous editions(2012 and before whoever opened there accounts) have the following way to remove the tabs from there custom app,
setup > personal setup > my personal information > change my display > customize my tab.
but,
In the summer 2013 edition ,i dont find a way of removing the tabs ,
In the setup , it only has administer ( includes manage useres and all) , build (includes create ,customize, develop etc) and moniter (includes system overview ,imports, deployment etc.
With respect to the apps. In the new UI you can
a) Click on setup
b) select create
c) Click on apps
d) Click the edit link next to the app you want to edit

You can't delete the standard objects.
You can remove the tabs from your app definition.
Setup > Apps > Edit your app > Remove the tabs.
Is that what you want?
