I want to save the result of 


<apex:selectCheckboxes value="{!countries}">
            <apex:selectOptions value="{!items}"/>


in a String.


Here i need to save that String value in a Custom object field.


How can I do this

You will receive output in a Array

String[] countries = new String[]{};


you can then create a string the

String s;

for(String sc : countries )

 s = s +sc;


You can do this directly in setter method for country, Ifyour question is can you bind with a string instead of an array or list then my answer is no you can not.
