Create DateTime for 8am in specific timezone

Hello,

How can I create in APEX a DateTime for 8am in a specific timezone (not specifically the user's timezone nor GMT)

I need to then save that on a DateTime field, so I need this to be a DateTime variable not a string

We need more information on this, are you using the Organisation Time ? 

What exactly are you looking for? Can you please elaborate with a screenshot - that will help us to understand the Situation better.
