Do you know how I can add additional fields to the Field Definition Page Layout? For example, in addition to Field Label, Description and Help Text, I want to capture Owner Group, User Group etc...

Don't think this would be possible as this is the standard page which stores information required by the backend to create a field in the database and should be hardcoded.
