The 'Sign Me Up' button is not automatically assigning the logged in user's name to the new Volunteer Shift Worker record.

Make sure that you have created a quick action named 'Sign Me Up' in volunteer shift object and also called quick acting through process builder.
You need to provide default value For Volunteer and Volunteer shift as well.
