Are configurations ( any customizations) retained when a trial org is converted to production org?

Hi All, 

When a trial org is converted to any subscription orgs like enterprise for example, will the data and configurations are retained?

I believe the configurations are retained as they are.

Data would be depend on the data storage of the destination ORG's edition.

As far as the APEX code are concerned, they will be retained in Enterprise edition and above, however, they will not work unless you have the required code coverage.
