How do I remove people from opportunity alert emails?
I am new to using Salesforce and need some help please. A few people have left our organisation but their email is still being used to send opportunity emails and also to other void email addresses in the organisation. How do I change the emails coming from the opportunity change in status?

You can either deactivate the user or change the
Creating Email Alerts for Workflow, Approvals, or Milestones.

For employees who have left your organization, you should 'Freeze' that employee from the User Detail page. Hence they become inactive in your org but yet their history is preserved. For example, records are created and approved but they will not receive any kind of email notifications. At the same time, that user cannot use his/her license until you make them active again.
