I need to autopopulate a picklist field from the Opportunity object into my Projects object. But only when the Projects object has an Opportunity associated with it.

I'm able to handle the auto-populate piece. but I'm running into a problem with creating a new Project without coming from an Opportunity. I'm getting an error thats not allowing me to create the new Project.
This is also a required field when another field has a certain selection made.

How are you trying to accomplish this? Process builder, Flow, Apex trigger? Also what is the exact error? Need to provide more data for anyone to be able to help you.

No images visible in your last post. But it sounds like you have a lookup to Opportunity and you need a criteria to skip the Process if the Opportunity lookup on the Project is null.
