My solution to this issue is overwriting the close date when the opportunity is first created with a workflow rule and formula. When a new record is created I add X number of days to the close date based on the creation date, not whatever close date the user puts in. This works because the sales process is much shorter than the amount of time that I add with the formula. When an opportunity is closed won or closed lost, the closed date is set to the day the stage was changed.
