How do I relate a case to an email?
Based on what I've read it doesn't seem like I can relate a case to an email from a global action (see screen shot). Can I do this by creating an object specific action?

This might not be possible with a simple configuration. You have a Case lookup on the custom object. If so, you could run a Flow when creating a new case to search all custom records that match the email address provided then write the Case Id into the custom record. You'd kick this Flow off with a Proces Builder upon Case create.
