can a single org configure with both outlook and gmail???

Yes, it is possible.

You can set up the Outlook and Gmail integrations for users who are assigned to Sales Cloud, Service Cloud, and some Lightning Platform licenses. If you extend the integration with Salesforce Inbox, users require an Inbox license.

any idea how to set up both g suite and  Microsoft 365 using Einstein Activity capture, like in my company some people are using g suite and some other Microsoft 365, so i want both users to connect to salesforce using einstein activity capture, how to do it?
