I am currently attempting the "Service Cloud Specialist" Super badge and was on Challenge 1 and got this error when adding profiles in the app. Error: One or more profiles that you added has reached the maximum number of allowed apps

App Builder Screen where I was trying to add the two profiles to the app.Error which I got after clicking on save button.

May be it will work for you. Are you using fresh org for this super badge?
If Not then kindly use fresh org may be this conflict your pre-existing work.

Yes, I have used a fresh org (new trailhead playground).
I still cannot figure out this error!

Actually I  have just recently completed this super badges so may be this suggestion will help you. 
I think you reached the maximum limit of Assignned App in Profile level so please give your look out on given profiles.

One more thing, I am not sure but may be the issue could User License so check your user licence once.
