In 'Creating Validation Rules' challenge, MailingPostalCode and ShippingPostalCode fields are not available in Contacts and Accounts respectively.

MailingPostalCode is the API name of the field so you can type this directly into your validation rule formula and it will work.

If you are using the Insert Field Button look for Mailing ZIP/Postal Code and Shipping ZIP/PostalCode which are the field labels.
