Can salesforce report on how often a field changes

Can salesforce report on how often a field changes or is it limited to only reporting the last modified date.  I'm trying to track how often users are editing their cases

You could overload the edit button to call a custom S-control that just does exactly what the edit button does, but also increments a read-only field on the page. Or you might be able to set some sort of workflow up to accomplish the same task (whenever edit, criteria on something extremely general like create date > epoch time).
