Now is there a way to modify field mapping for standard fields?

Is it possible to modify the standard fields in the lead object?

 

Possibly remove the requirement to create a contact when converting a lead to an account?

 

Theoretically, if not, I could create an entirely custom leads tab which would convert into accounts, correct?

No You can not change field mapping in standard fields, there is very little on standard field that you can modify , only attributes like helpText etc. you can update. Could you please explain your requiremnt a bit more.

We want to be able to convert from leads to accounts without having to have a contact converted too.

In that case I think you can write a trigger on lead for this which will insert a account as per your requirement. If you want any assistance in writting trigger , I can help you in it.
