Is it possible to remove/edit fields under Activity History related list for Send an Email page?

Is it possible to remove/edit some fields like To, AdditionalTo under Activity History related list for Send an Email page layout?

Go to setup --> App Setup --> Customize --> Activities.

I went to setup --> App Setup --> Customize --> Activities. But here I am not able to find the fields related to Send an Email functionality and didn't found the layout also..Please let us know is there any alternative!!

When you navigate to App Setup > Customize > Activities > Activity Buttons , You will have to overide the Standard 'Send an Email' button with S-Control
