Salesforce has a cookbook that walks you through creating three different apps with the Cloud-Base Flow Designer.

It covers a simple tip calculator, a survey, and mortgage calculator. There are a handful of tips along the way for creating good flows.
If you feel like winging it, try these... certification exam, IT troubleshooting app, or have fun with an adventure game, or online dating service (flow logic to find compatible matches).
My own tip: sketch it out on a whiteboard or paper first, before opening the designer.
