I think the most common use of it is integration , JSON is an easy and light format to transfer data between system, where "systems" can even be a JavaScript on one of your pages...

I do believe that when you will need a way to transfer data one of your first solutions will be JSON, Salesforce supports JSON in a very easy to use manner , and has great serializer and de-serializer for it.

Other than integration, JSON can also used in Visualforce pages. Most of the jQuery or EXTJS(JavaScript framework) plugin like data table uses JSON as Data.
