Status Field to track history

Hi. I'm looking for a way to create an opportunity field that I will call Weekly Status. I'd like this field to capture date & time and user plus the free form text that they are going to type in to log latest status. I'd like for this field to be historical (latest update above all previous entries) Is this possible?

I think the Notes and Attachments related list would work well for this - have you tried it?
