Automated E-mail Workflow - Track at Activity Level on Object

Anyone able to find a way to track an e-mail at the activity level when it's based on an field level trigger? I know it's not native functionality, but any ideas?

I don't quite get your meaning, but if you use Email To Case you can actually make workflows on the EmailMessage object that operate on the parent Case.

When you create the workflow rule, create two workflow actions with the triggering criteria. One is the email that you send out and the other is a completed task. You can label the task with the email subject and copy and paste the body of the email or a link to the template. When you see the task appear as a completed activity, you will know that the email went out.
