I can't seem to find any documentation as to what happens if a user logs in at 4:30 pm and OWD for login hours is set to 5:00 pm. If the user is still logged in at 5:01 p.m., what happens?
Can't seem to find the answer anywhere. Thank you in advance!

It'll just kick them out the next time they move from one page to the next. If they're editing a record while the login hours expire, and then try to save the record after the End Time, I'm pretty sure their edits will be lost, but I'm not certain on this aspect.
Do you have a developer edition org or a sandbox? You can try it out in either of those environments, without repercussions.
