Is it possible to get the contact's phone value and save it on task record using workflows field update?

I do not believe that it is possible. The task field that holds the contact reference is called Who and it is a polymorphic field (looks to contact and lead) because of that it can be a bit tricky. There is a chance that it is possible and someone else on here might know better then I but I was unable to use the Who.Phone relationship a minute ago when I attempted to create a field update using the contacts phone information. Your best bet would be to build a trigger that does the update for you. If you end up going the trigger route and need some help writing it post here and I will see what I can do.
