Can someone tell me how Salesforce measures page views?

 We have one force.com site setup and have started to get emails notifying us that we are over the 500,000 page view limitation. Our adobe analytics is giving us numbers way lower than that. Can someone help?

We're having to delicately handle this ourselves.  Page views along with AJAX requests including remote action calls all count against your monthly page view limit.  See more here: https://developer.salesforce.com/docs/atlas.en-us.salesforce_platform_portal_implementation_guide.meta/salesforce_platform_portal_implementation_guide/sites_limits.htm#SitesPageViewsWhatCounts
