do you have single currency org?. you can change the corporate default currency settings by editing

Administer -> Company Profile -> Company Information ->Currency Settings

After you place a  symbol, you can change the symbol’s instances on the art board and if you want, redefine the original one with your edits. You can use symbolism tool for this.
