Update Opportunity Field via Process Builder when Task Created

I am wondering if it is possible to update an opportunity field via the process builder when a task associated with the opportunity is created. The specific use case is that when a particular type of task is logged (criteria met) I want to check a box on the opportunity that the task is related to.

When I create the process, it doesn't appear possible to get to the related-to opportunity record.

Appreciate any help and insight that is provided.

You are correct, it is not possible using process builder exclusively to accomplish what you are looking to do, but Process Builder still is necessary. After Process Builder verifys the task meets criteria, it will need to launch a flow that looks at the ID of the "Related to" record and determine what it is or query opportunities for the desired record. After you've zero'd in on the opportunity you want in the flow, you can update it to suit your needs. Hope this helps you,
