How can I edit a custom field that I have set to be automatically filled

I have created a process builder action that automatically fills the Service End Date of an Opportunity, how can I make setting to make the value in the Service End Date field editable if it's wrong?

Process builder should not stop you from editing it . You should be able to edit the record after the process builder finishes its update. Check the page layout once

you can use something like this in process builder as a condition.

update the default values only if 

Service End Date  not null equals false
