When you create new notes it does automatically create notes in Leads page.
You can copy picklist values from Leads to Accounts as below:
regarding linking of Lead fields to Accounts once converted --> go to lead fields --> Lead Custom Fields & Relationships --> Map Lead fields.
You can map leads fields to Accounts, Contacts, Opportunities after conversion.
