Edit (Custom) HTML or VisualForce Email Template Before Sending Email

Was wondering if anyone found a work around to editing Html / Visual Force Template in preview before sending ?
I need to incorporate a table within the template but some section of the email has to editable.

I believe that might be possible with some new features around social studio and custom messaging. I have seen this implemented using a VF component and a workflow that sends out the email via email alert once the email body has been constructed as a record on a custom object, but it would be a lot of custom development. There may be a simpler answer, but those are the approaches that I've seen.

Currently on my visualforce email template, I have certain fields on an Opporntunity displayed on the email along with a table containing a list of Opportunity Line Items. I would like to make the email template editable after selecting it for use from the send email button, so the user can add on text to the template or change text before sending the email. So, I'm pretty much just looking for a solution that would allow me to include this table in an email template as well as making the contents of the email editable.
