Apex Proxy

Does anyone has experience work out the Apex Class with an @RestResource annotation and this does not support transferring cookies from the proxied server to the client?

I'm not sure what you want to do, but I can say that REST services are inherently stateless, so you should handle manually the response headers to send whatever you want...my 2 cents :)
