Hello - I would like some guidance on how I would be able to have salesforce save a field within the leads category as a note whenever it is updated.

Example:

We have a field within our lightning Salesforce system called "notes" as a quick way to run status update reports for our bosses. We update this field weekly but would like to keep a record of them from week to week so we'd like for them to live in the Notes field with the title "Updated Notes [today's.date]."

My supervisor wants a field that shows the difference between our Projected Revenue field for the year from our Account page and the sum of our actual Revenue field from the opportunities page. 

1) Is this possible?
2) How do I do this?
