How can I delete my Trailhead org and create a new one? Or a second one?

I'm having some issues and the response was to try a new org - how do I do that and link it to my Trailhead account?

Build a suggestion box app - Modify the user Experience

When I got to Step 2, Add a compact layout, the Suggestion Category Field doesn't show. I did create this field, and it shows both in the list of fields on the object and in the detail page (see screenshots below). I wouldn't care because I'm confident it my understanding of the process, but I can't complete the module. 

It's in detail:

And it's in the list of fields:
User-added image

But not in the list of fields for the compact layout:
